- a handul of claytonia
- 1 tsp Dijon mustard
- 1 tbsp wine vinegar
- 3 tbsp light olive oil
- Wash the claytonia leaves gently if needed, shake off the water.
- Mix the mustard, vinegar, olive oil and a pinch of salt together vigorously in a mug or glass to make a vinaigrette. You could also do this in a jar, screwing the lid on and giving it a good shake to a make a really good emulsion.
- Drizzle the vinaigrette over the claytonia and serve!
