Miner’s lettuce salad


  • a handul of claytonia
  • 1 tsp Dijon mustard
  • 1 tbsp wine vinegar
  • 3 tbsp light olive oil


  • Wash the claytonia leaves gently if needed, shake off the water.
  • Mix the mustard, vinegar, olive oil and a pinch of salt together vigorously in a mug or glass to make a vinaigrette. You could also do this in a jar, screwing the lid on and giving it a good shake to a make a really good emulsion.
  • Drizzle the vinaigrette over the claytonia and serve!
