We were chatting to a Vegbox member the other week. “Winter’s coming,” she said. Then with trepidation: “Does mean we’re going to have celeriac again soon?”
Celeriac is indeed back this week! Now it’s true that it’s not the best looking of root vegetables, with its dirty, creviced skin and strange knobbly aspect, but the flavour is amazing. Subtle, aromatic, nutty.
While we embrace the earthy roots of winter, we keep providing green leaves as part of the mix, whether it’s chard, spinach, salad or kale. Green leaves and muddy roots – a delicious balancing act!
